
Zucchini Tortellini Soup
1 pkg mild or
hot Italian sausage1 large can diced tomatoes
2 11.5 oz cans of tomato juice
1 can tomato soup
1 can water (use tomato soup can)
2-3 zucchini sliced (depending on size)
1 pkg fresh cheese tortellini
Italian seasoning to taste
Brown the sausage and break
into chunks. Drain, then combine all ingredients in a large pot. Cover, simmer
on low for approximately 20 minutes. When the tortellini swells, it is done.
Serve with grated Parmesan cheese.
